Fish is great source of protein, but did you know that fish heads are a great source of iodine and the thyroid gland?

Whole Intentions, a food blog written by Paula Miller, specialises in healthy foods. This post is called ‘Fish Heads in my Stock Pot’ and it explains the health benefits of making fish stock from fish heads.

“Not only is fish head stock rich in fat-soluble vitamins”, explains Paula, “It also contains the all-important thyroid gland … … which supply the thyroid hormone whose main purpose in life is to run the body’s metabolism.”

Ann Marie Michaels writes a blog about cheese, butter, and all those other things which we are not supposed to eat. And she includes fish heads in the latter category. Here is her take on making fish stock – which, if you have been paying attention, we now know contains iodine and thyroid glands, both of which are good for post-natal women.

In Nigeria, the Igbo love to eat dried cod, or stock fish as it is called there. We are sharing this recipe for a delicious dish called Okporoko beans which is made with dried cod – which is a guaranteed winner in Southern Nigeria. 

The South African foodie website Celtnet alerted us to this fabulous version of Vis Kop or Fish Head Soup. It takes a traditional Southern African recipe for fish head and bone soup with potatoes, onions and celery, and adds a twist by flavouring with curry powder.
